Sub domains

There seem to be a few posts on this but I still can't work it out.  I have the domain meridiancanoeclub.com and I'd like to create a subdomain of beta.meridiancanoeclub.com so that people can try out a new site before I replace the current one.

I can't work out what I have to do, I basically want this sub-domain to point to a different folder in my account, but I don't get where I can set that up?  

Any ideas?
