Doing a variety of tweaks to the website for optimisation. I know that anchor text is important for SEO but not sure what the difference is between anchor text and hyperlinks.
I have added actual hyperlinks into my website for a couple of external sites (which appeared really small but sorted that out by reading other forum posts), so know how to go about that. Thought I would try the anchor text for some internal links but when I press the anchor symbol when editing, it just brings up the anchor icon in the edit box along with a name box - there is no box to add a link.
What is the best (and most effective) way to add anchor text in epages to aid my SEO.

I think you are actually referring to two separate things and getting them confused:
Anchor text for SEO
This is where your displayed hyperlink text includes keywords. For example:
bad - click here
good - acoustic guitars
Anchor text for page navigation (This is the Anchor symbol you refer to above)
I've never actually used this but this is where you have different sub-sections on the same page. Anchor text allows users to jump further down the page by clicking on a link at the top.
I'll try to find an example when I have more time and add it to my post.
