A few years ago my mother-in-law signed up to a BT email address when she got a broadband package with them.
Since then I have created a Gmail and a Microsoft account with this email as the username/email account.
Things get really messed up that BT are giving her awful deals on the fact that she is worried she will have this email deleted if she switches providers.
As I have set this email up with Gmail and Microsoft, if this email does get deleted, would she not be able to receive emails via Gmail servers using this email address as their own, or would emails stop coming to any of these accounts once bt shut it down.

No, she will still be able to log in to any site that uses an email address as a username, even if the email account itself is 'dead'.
But, if the password is lost or forgotten it might not be possible to recover. The email address would be used for password recovery - they would email a reset link to that email address.
With Gmail you can set up additional email addresses for recovering a password. So create a new Gmail address and set this as an additional email in her original account in case she forgets her password. This, second email does not even have to be a Gmail address.
For the Microsoft account, you should add a mobile phone number that can be used for password recovery.
Log in to the MS account and it should offer the option to add a phone number.

If the BT email address associated with your mother-in-law’s account is deleted, here’s what you can expect:
Email Access:
Once BT deletes the email address, she won’t be able to log into it anymore.
For the first 60 days after deletion, the email address can be reactivated by the BT ID account holder via MyBT.
After 60 days, the mailbox contents will be permanently deleted and cannot be recovered.
However, she can reuse the email address for up to 3 years after deletion, but the mailbox contents won’t be available1.
Other Email Services (Gmail and Microsoft):
If she has set up her BT email address as an alias or forwarding address in Gmail or Microsoft, emails sent to that address will not be delivered to her Gmail or Microsoft inbox once BT shuts it down.
She won’t be able to receive new emails via Gmail or Microsoft servers using that BT email address.
It’s essential to update her contact information with any services or contacts that use her BT email address to avoid missing important communications.
Remember to check her BT account settings and consider switching to a different email address if needed.
