as I understand it we can keep our @btconnect.com email addresses if we open a separate account for
this to happen, they will then be ported to a new email address we set up eg, @outlook.com is this true and if so who do we contact in order to facilitate this?

There is no way to keep your btconnect email addresses if you cancel the BT Business product they were provided with. You could look at adding email forwarding for a period of time to a new address to help with the move but there is no way to keep the mailboxes open indefinitely.
